Friday's Frugal Food: Hash Brown Casserole
Bob Evans & Simply Potatoes are on sale at Publix this week. I plan to use the frozen hash browns that I bought to make this hash brown casserole as a side for dinner!
INGREDIENTS:
1 small onion, chopped
1 (2 pound) package frozen hash brown potatoes, thawed
1 pint sour cream
2 cans condensed cream of chicken soup
1-1/2 cup shredded Cheddar cheese
1/4 teaspoon ground black pepper
a couple crushed Ritz crackers as topping(or corn flakes)
DIRECTIONS:
Preheat oven to 350 degrees F. Grease one 8x12 inch baking dish.
Over medium heat, saute onion.
In a large bowl, combine the onion, hash brown potatoes, sour cream, soup, cheese, pepper. Mix well and pour into baking dish. Bake for 50 minutes--until bubbly.
During the last 10 minutes of baking, sprinkle crushed crackers over casserole.
