Friday's Frugal Food: Chocolate Banana Bread Pudding
Thank you Elizabeth for sharing this recipe!
OH MY this is good! I always take the last couple of biscuits or rolls leftover and freeze them, so that's what I used this morning. Some of you may have Pillsbury from the last Publix sale still in the frig.
Chocolate Banana Bread Pudding
2 cups milk
4 eggs
1 T vanilla extract
1/2 C sugar
1/2 C Splenda (you can use all sugar if you want, but I wouldn't do all Splenda)
4 cups cubed leftover biscuits or rolls
1 c semi-sweet chocolate morsels
2 sliced bananas. I used two that were a bit overripe.
Preheat oven to 350. Prepare a smallish casserole dish. Mine was 5x5. Fill a roasting pan with water, enough to cover 1/2 the casserole dish when you set it in the roasting pan.
Combine the milk, eggs, vanilla, sugar, and Splenda, Mix on low speed for 2 minutes. Pour your bread, morsels and bananas in the wet mixture, and allow to soak for at least five minutes. When bread is completely soaked, pour the mixture into your greased casserole dish, and set the dish in the middle of the roasting pan filled with water.
Place the pan in the preheated oven, and bake at 350 for one hour or until a toothpick in the middle comes out clean.
Allow to rest five minutes before serving. You're going to love this!!
